Care Instructions
Inspect
Check to ensure the shell is intact. A tightly closed shell means the oyster is alive. If it’s open and doesn’t close when tapped, throw it away.
Store
Keystones should be kept in a cool environment. Ideally at 36° F, on a bed of crushed ice.
Shuck
- Snag one of our Shucking Knives.
- Protect your hands with an oven mit or folded kitchen towel.
- Place the deep cup side of your oyster in the palm of your hand.
- Locate the Oyster Hinge which is the part of the oyster that is joined together at a point.
- Place the knife tip on or near the hinge and twist at a 90° angle, then wiggle back and forth until you “pop” the hinge.
- After you pop the hinge, slide the knife between the shells along the side to cut the adductor muscle holding the shells together to separate them. Make sure you're keeping the knife as close to the top shell as possible to prevent the cutting of the oyster in the process.
- Run the Shucking Knife under the oyster to remove it from the shell and enjoy!
